Here is a rice reciepe all the way from Hidalgo, MX.

You will need minute rice
1 tbs minced garlic (in the little refrigerated jars)
Knorr tomato bouillon w/ chicken flavor
1/2 small diced onion
water
3 tbs cooking oil
pan

1.)You will add the oil to the preheated pan.
2.)Add garlic and onion, sautee gently (1 minute)
3.)Add rice (how much ever you want to use), sautee (3 minutes)
4.)Add water, as much as needed (or stock/broth if recently cooked meat) cook on medium heat
5.)once rice looks like it is 1/2 way done, add 1-2 tbs of bouillon (add to taste)
6.)When almost all the water is boiled out and rice is soft, take off heat and let rice finish cooking in its own heat. (about 5 more minutes)

This is often served with only tortillas or with your choice of meat!
